To answer my own question - the only way I have found is to hide CD3 in workbench prefs. When I put a music CD in the CDDA icon comes up but nothing else. (which is perfect).
When I put a data cd in such as the AOS3.2 disc then nothing comes up on the desktop but it is shown in New Meter and available in Dopus, so I think I will go with that for the moment. (Once my core system is setup I rarely use data CDs on this machine).

At a first attempt it doesn't seem to want to work for me.

My Bad - it now works!

This comes with a 3.9 prefs app as well, which gives the additional option of "Show only if valid" as well as the hidden/visible options that the default prefs gives.
I currently have both prefs set ups in my prefs folder and am not sure if there will be a conflict, I am using the GB one only to set the drive status. It seems to work at the minute - setting it to Show only if valid causes it to shopw as hidden in the 3.2 workbench prefs.
