It would be like many of the open source engines that can use the data files, like the many doom ports, or OpenMW for Morrowind, OpenRA for Red Alert / Dune 2000, etc.
Maybe we can petition the current owners for a purchase of the game as a new port if they allow it to be published? At least then they could get an estimate of how much potential cash they could get from the port being available. Not sure if perhaps it could even be a bundled game with new Vampire purchases or something.

The bad thing about this is that it would require the permission from these two parties. Runesoft almost certainly cannot grant the permission for anything else than their modifications to the sourcecode for the PPC-Amiga port. If they gave it, there would still be the requirement to get a permission from Anuman/Microids. This double-dependence reduces the likelihood of a (legal) release by at least an order of magnitude IMHO.

If that was the idea, it was not clever to show the results of this proof-of-concept publically. Now it is clear that it is possible and that a considerable effort was already put into it. This only weakens the negotiating position of the Apollo team. They need a license to not render their effort wasted. Furthermore, they can't negotiate a lower price because the game might turn out to not be feasible. It's now proven to be feasible.
