HDMI Audio and Video with RGB2HDMI

I have an RGB2HDMI adapter for my A600, and I was wondering if it would be possible to cut the HDMI cable and find the audio wires, splice them up to phone connectors and get audio from the Amiga mixed with the HDMI video signal?

No, HDMI doesn't work like that.

You can get HDMI audio injectors / embedders, that may do what you want, but I've never used them. I prefer to covert the HDMI signal to DVI and use a monitor that takes that plus audio in.

RGBtoHDMI is a "bang the metal" device and does not use Linux and so you can't even use a USB sound card to get the Audio into the Pi like you can do with PiStorm (Musashi)

A cheap and simple HDMI audio injector will work. Just some more cables to manage...
