I think from memory Flight Simulator II by Sublogic or other flight sims of the late 80s just draws into a rectangular area of the same screen in full screen mode so cockpit/status panel isn't overlapping so may just be a copperlist change of screen memory location midscreen. Not sure.
Not just polygons though, the 2.5D "3D" scaling levels on Unreal seem to have 3 colour blocks of scaling graphics so I assume that lack of color helps keep the speed up.
