I loved Knights of the Sky - though it was often really difficult when there were dozens of planes in the sky. The feeling of 'personal' in-your-face-combat was great. I never did complete that game...hmm...where did I put WinUAE.....

Gunship 2000 - cos flying a helicopter is cool, and flying one through a tunnel is even cooler.

B17 - it seemed not many people liked this, but I really loved the crew management aspects of the campaign. I have the sequel on PC but have never played it much really. Perhaps it just seems more of the same.

The other flight sim I really played (though its not really a sim) is Combat Air Patrol. Supposedly your actions directly affected the outcome of the war, and there was this big rumour at the time that it was possible to find the vehicle Saddam Hussein was travelling it and send it sky high in smoke, thus winning the game.
