If you want to run Linux/m68k, try Aranym (http://aranym.sourceforge.net/). It's an Atari-emulator, that can also boot Linux.
I haven't tried this myself, so I can't say if it actually works...

I tried Quake on UAE some time ago, and it runs pretty well.
Quake must be one of the most demanding games for the Amiga... at least for 68k-machines.
