Some questions about FS-UAE

Hi,
I'm completely new to FS-UAE and would like to ask a couple of questions. I apologize if they seem a bit simple.

Firstly if I have booted up from the workbench floppy disk images then once actually booted up can I remove those images from the floppies 'page' and mount other ones such as game or application disks while still having access to workbench.

Secondly if I have a folder mounted in the hard drive 'page' what can be done with it? Is it effectively a hard drive for the machine? Can workbench be installed there and the machine booted from the folder, or is that not how it works?

Yes, but you have to setup an ADF mountlist before starting the configuration otherwise you wont see any available disks to swap with when the emulation starts.
