I use XmPlay with the libvgm. Then I save to .wav each FM channel (8) , then I save to .wav the PCM channel. (1), then I looking for the tempo /bpm) loading the percussion into protracker. Then I extract from the .wav the drums, snares, hihats, toms...etc.. I try to copy the same percussion into a protracker channel. So I can check the tempos and how is defined the tune/patterns

Once that's done, the party begins.!

I analyze each FM channel to see which are the main ones and which are supportive. (Delays, chorus.....)
I try to analyze in my head which melodies or harmonies are the main ones because I only have 2 channels free in Paula, remember that one is for percussion and another one for the main bass.
if there are chords I try to join channels to make a note with major, minor... And well, in short, that's it, patience and have a good ear to find out the notes.

Hoot gives you a GUI and a audiovisual reference; maybe quality is a bit lower but it helps
