How could I forget Laser Squad?

Nothing can beat speccy version of course but Amiga version is not bad.

Spacetaxi 3
Knights (with cardboard box to separate split screen view)
The Settlers with 2 mice
Lemmings with 2 mice
Llamatron
Tritus (best competitive tetris ever supports up to 3 ply.)
etc. etc.

I second Gravity Force 2, but be sure to get Gravity Power. It's the most complete version.

especially the 5 player mode (4 with joystick, one with keyboard) is awesome!! i play it every second weekend with my 3 kids and my girlfriend.

Dyna Blaster is probably the best multi-player game ever. REAL multiplayer, no internet shit.
