There are a couple of factors involved, but essentially there's no practical maximum size, provided you take care when setting it up. Drives over 4GB in size need appropriate drivers and filesystems to avoid corruption and data loss. OS 3.5, 3.9 and 3.1.4 all avoid this problem, OS 3.1 and 3.0 need patches loaded at first boot to work around it.

General purpose or specifically for mice / controllers? A general purpose one will let you use things like USB flash drives, certain printers, network adaptors etc., as well as mice and keyboards, but will only work when the OS is running, thus rendering your mouse useless for most games. A specific, mouse and controller only adaptor will not support flash drives or anything other than mice and game controllers, but will work for any software as they emulate the standard inputs.

If you're mounting it internally, the colour doesn't matter. Strip the case off it and use a 3D printed mount instead so you don't need to modify the case to fit it.

With a USB adaptor that supports HID USB mice (and not just PS/2 mice with USB connections and support), you can use either wired or wireless mice.

All are possible depending on your preference. Simplest option is any TV with an RGB SCART input, which will give you decent results. An old CRT with SCART or an old RGB CRT monitor will give you the closest experience to the original intention of games etc. Modern displays that don't support the Amiga's 15kHz output will need additional hardware to show an image.

OS 4.1 is for PPC CPUs only, so you can't run it on an A1200 without an exceedingly rare, expensive and fragile PPC accelerator. Even if you did get one, there are better options as an A1200 is quite limited for OS 4.1.

Realtime Clock Mod.
This is usually either part of an accelerator or can be added to an accelerator. It can also be added to the motherboard if the accelerator option isn't available.

A nice accelerator.

I would add a simpler method of transferring information to other systems. A PCMCIA CF adaptor or network adaptor (or even both) will make it easier to transfer files to and from other systems.
