Visio for Amiga?

Well not really but I was wondering if there was any sort of diagramming tool?

Not really in that style for classics that I know of. It depends on what sort of diagrams you wanted - if you wanted to do some simple vector diagrams, there are vector drawing tools such as DrawStudio and ProDraw. If you wanted to do some electronic diagrams, there's AmiCAD. There's a mind map tool for OS4 called MindSpace that's quite good, but no port for OS3.
