How do you turn the canoe around? and how do you avoid the deadly waterfalls as there seems to be only one route.

I believe you're supposed to walk a lot of the way and only take the canoe for fast movement. I've never figured out how to go the other way. I figured it was because the current in the water pulled you that way anyway.

The reason why I think you must be able to turn around is the indian chief asks you to recover his papose?? from the eagle's nest which is back upstream. I don't know this game has got me baffled.

You can walk practically all over the map without the use of the boat.

Yep, in my mind boat was only to get in latest chapter quickly, if you wanna do the game at 100%, you will need to walk IMO.

Anyone actually playing this game? Don't you think the controls are a bit quirky?
