Unfortunately that's how it needs to be done unless you have something like DefIcons installed, which can assign default icons to different types of files. Without DefIcons installed, you'll need to copy an icon to the file to unpack. I would suggest keeping a suitable icon somewhere handy and copying it to the file rather than changing the file settings each time, but it's probably still quicker if you have DOpus installed.

I see - I might have a play with Deficons if that's the case (I can see it on aminet) but the copy icon is a good idea.

I don't know why I thought Workbench could do this but there are work arounds it seems - thanks.

You need DefIcons indeed.
Although I think I remember some commodity that handles extensions automatically.

Natively Amiga OS does not handle extensions the same way (MS) DOS does. It is not limited by the extension. There can very well be a "whatever.exe" that is actually an IFF picture.
