All you need are the files from the link above and ScummVM from here.

I simply put the ScummVM executable in the same folder as the "Sam n Max" files (this is not essential). I then run the executable, this starts the game in a WB window. Use the scummVM menu to find the game executable on your HDD or CD.

I use WarpOS version of ScummVM performance pretty good. The 68k version on my 060 is poor.... stuttery sound and skipped graphics. I have not attempted to tweak things though

It's possible to play well this game with a Amiga 1200 68030/50 and 64 MB RAM?

Yes, but if it is too slow with the latest ScummVM you should try the (very) old AGA-only-versions. And: Forget about MIDI.
