I guess installing MorphOS itself is easy enough and no guides are needed, but then you have two options.
Either continue "manually" and install E-UAE with help of, for example, this guide:

Or install
Chrysalis pack over your fresh MorphOS installation, I think it comes with E-UAE pre-installed and you probably only need to copy couple of kickstart ROM files to the right place. The Chryalis pack is a pre-made configuration/software pack like Amikit, ClassicWB, etc are on the classics. Not everyone's cup of tea, but at least an easy way to take a quick look for software.
