I guess it really depends on the RAM traffic profile of the Amiga (I imagine it is not particularly DDR3 friendly) and if they implement a 2nd Level cache in their CPLD/FPGA.

Exactly this, DDR3 for a 060 might be a really bad idea if there is no caching.
For reference, this is exactly why boards like the MiSTer have addon's with plain old DRAM's.
