I'm talking about using 256 shades of grey to make it look good, not to achieve a particular atmosphere.

Consider a true color image (ok the resolution is downscaled to Amiga levels so at 320x256 you really only get ~82k pixels and also the theoretical maximum colors)
The second image is downgraded to 256 colors (with dithering) but this is not realistically what you would get on AGA (without a hell of a lot of copper palette hacks, anyway) because youd more likely have a fixed palette with fewer colors in certian ranges..
Then at the bottom you have a 256 shades of grey image.
Looks much better with smooth gradients etc.. and for certain types of games it could work IMO. (Think Limbo on Xbox
