Unfortunately most video editing software has only primitive deinterlacing algorithms. If it would be "natural" video material, there are some ways to simulate motion blur, which would make the video look less jerky. But if we are talking about Amiga game footage, that would look out of place too so there isn't much that can be done I've certainly tried.
