Pretty sure it has to do with density. The bigger the density, the less reliable they became, more prone to errors in keeping all that data together. Think about a bus which you cram more and more with people. It will break more often the more you abuse its space.

5 1/4 disks reliability: single > double > high density
3 1/2 disks reliability: single > double > high density

In the case of 3 1/2 disks, high density ones are basically useless.
