You should use uaescsi.device and an Amiga CD file system to read the CD and not add it as Windows directory. When using a directory, firstly the file names are not read correctly (all in upper case) and secondly all files on the CD are marked as write protected, which is what causes your problem.

You can use this one if you don't own a legal copy of CacheCDFS (also contained in OS 3.5+ or IDEfix) or AsimCDFS:
