In my experience because I had s3 cards back then I never had any probs. We are talking pci here, for isa/vlb the best ones are the Cirrus Logic based cards.
Also I don't think that the Gravis Ultrasound is a good option these days. It is a great card, but all I heared was some compatibillity issues... it may require some effort to get it working, patches to be found, etc... In terms of ease and compatibillity I don't think it is a great option... all these info was easily found in the 90's , but now things have changed...
