Id imagine that’s probably why the limit exists (fat32) if you end up finding out large capture files aren’t supported you can script combining them with avisynth...

Is is possible with the uae-configuration to load a new config file and reboot within the amiga environment. I.e i have a selector to pick

A500,600,1200 etc within the amiga environment...

Repainting - want as close to original colour/color as possible

Go to a paint store they will get the exact hue, let them scratch the surface and check the base coat also. Most large stores should have a spectrophotometer

Even if there is a tool, I'm dubious as to if the drive really low level formats the drive. They probably just wipe the user data in each sector.

As discussed 100 times before a real low level format disappeared very early. A real low level format means rewriting the sector markers on the drive. No drive has done that since the very early...
