Is the game Chaos Engine? If your expansion card has fast ram, it will break that game in the way described.
You may check to see if the card has a jumper that disables ram on it.

My a500 is 1.2 rom, so I'm thinking the 8372A would be overkill...

Shouldn't it be much higher? 68000 @ 8mhz (a500 example) is listed as 1.4 mips. While the i9 is not on there, the i7 ranges anywhere from 50k to 100k mips.
