You can run everything which is a client. Ping, Traceroute, ftp, www, mail, ssh (if you find an Amiga client) etc.

You can also run servers which can be run standalone. It's not easily possible to configure an inetd, though.

You can use the Ping program from the AmiTCP package. Genesis' Ping should work, either (Genesis is built on AmiTCP after all).

A nice feature of the Amiga's TCP/IP stacks is the TCP: handler. It can be taken from AmiTCP or Genesis, too.

I need to add that later versions of WinUAE can also emulate a real Amiga network card which is driven by a real Amiga TCP/IP stack. This enables you to do everything a real Amiga can do, too.

I've even heard of people who set up their old dial-in BBS system on the Amiga and put it on the internet through a serial->telnet wrapper and moved all this to WinUAE.
